Mason Jar Salad

August – unquestionably one of the most exciting times of the year that equally ushers in a trickle of anxiousness before September strikes. So much to do, so much to see. To find the time to run errands, keep the house clean, cook, hold myself together all while merely surviving in blistering heat is an undertaking I’d be willing to forgo anytime. To keep it simple, salads have become a regular go-to. But can we all just take the time to acknowledge that monumentally discouraging task of chopping up the ingredients for a salad? Cue these oh-so-perfect mason jar salads, perfect for on-the-go or to keep as a reserve of chopped up, ready-to-go vegetables. Big bonus: pretty colours that make me feel all kinds of happy.
