Green Apple Salad with Greek Dressing

Cool, calming, refreshing. Such is the taste of this lifesaver of a salad that I have been in so much need of this summer!

Ingredients (6 servings):


  • Green lettuce
  • 1 green apple, diced into thin slices
  • 2 Roma tomatoes
  • 1/4 English cucumber, diced
  • Kalamata Colossal olives, pitted
  • 2 hardboiled eggs, diced


Greek dressing:

  • 1/4 cup olive oil
  • Juice from 3/4 lemon
  • 2 1/2 tbsp red wine vinegar
  • 1 smashed garlic (not diced)
  • 1 1/2 tsp dry oregano
  • 1/2 tsp dry chives
  • Salt and pepper, to taste



Toss all of your salad ingredients together. In a small jar, mix dressing ingredients together and shake. Pour dressing over salad. Enjoy!
