Sunday baking episodes are such a freeing activity. They help me set my goals, get myself in a working mindset and focus on what’s ahead. Gluten-free walnut brownies have been a weekend ritual for the past couple of weeks and I have no complaints. 🙂
- 1 3/4 cups chocolate chips
- 1/2 cup cocoa powder
- 1/2 cup brown sugar
- 4 eggs
- 1/2 cup butter
- 3/4 cup crushed walnuts
- One pinch of salt
- Parchment paper
1: Preheat oven to 350°F.
2: Melt butter over low heat. Once melted, add in chocolate chips. Stir until combined and smooth. Take off heat.
3: Pour the chocolate butter mixture into a bowl and add sugar, eggs, cocoa powder, brown sugar, crushed walnuts and salt. Mix well.
4: Pour mixture into an 8 x 8 inch pan lined with parchment paper.
5: Place into oven and bake for approximately 35 minutes. Check if done by sticking a knife or toothpick into the brownies. If it comes out clean, it is ready.
