A little change-up from the regular avocado breakfast toast is something I’ve been longing for for a while now. Sometimes it simply dawns on you that it’s time to try something new. And really, what better time than now to try your hand at all kinds of homemade salad dressings? This one in particular is all at once creamy, whipped, velvety and rich – the perfect complement to a light afternoon salad or summer soiree. I’m simply over the moon for this delectable treat! Paired with a flavourful chicken salad, it’ll leave you gratified for dayyyyys. It’s also great to store in the fridge or with your salad for a couple of hours to really get those flavours mingling. It’s a beautiful Sunday morning, you may already have most of these ingredients in your pantry and might even have some time on your hands, so I leave you with my creamy avocado salad dressing recipe..
Ingredients (2 servings):
- 1 medium-sized ripe avocado
- 1/2 lime
- 1/3 cup plain yogurt
- 1/2 clove of garlic
- 1 tbsp olive oil
- 2 tbsp ranch dressing
- 1 tsp fresh chives (optional)
- 1 tbsp chopped parsley (optional)
- 1 tbsp milk (and some extra)
- Salt and pepper to taste
Add all of your ingredients to a food processor and whisk until smooth. Continue to add in 1 teaspoon or tablespoon of milk to reach desired thickness. Serve with a chicken salad or salad with bacon bits. Enjoy!
