Coconut Pancakes

Well, my friends, the Euros have started and I’m pulling inspiration from lazy Sunday mornings and early afternoon breakfasts to bring you this coconut pancake recipe. This little tweak can do just as much good to your palate as it can to your weekend routine (as coconut milk tends to).. fluffy, full of sweetness and flavour!

Ingredients (2 servings):

  • 1 1/4 cup all-purpose flour
  • 1 1/4 cup coconut milk
  • 1/8 cup sugar
  • 3 tsp baking powder
  • 1 egg
  • 3 tbsp melted butter and some extra for greasing
  • 1/4 tsp salt

 

Directions:

1: Mix together flour, sugar, baking powder and salt.

2: In a separate bowl, whisk together egg and coconut milk.

3: Pour milk/egg mixture and melted butter into the dry ingredient mixture. Mix until well combined.

4: Grease a medium-sized pan with some butter over low-medium heat and pour two tablespoons of the pancake mixture onto the pan, cooking approximately 5 minutes on each side. Enjoy with some fruits and maple syrup!

  • I love coconut flavour! I was wondering if you’ve ever tried it with coconut flour? Once it tried it but it was an epic fail. Any attempts, love to hear your thoughts!

    • Hi! No I haven’t but like I said below, I’ve heard that mixing it with almond milk and some coconut oil/butter is a treat! So goood 🙂

  • That sounds yummy! I’ll have to try these! Have you tried adding in some flaked coconut into the recipe? I bet that would add to the coconutty flavor.

    • No I haven’t.. although I’ve heard that mixing it with almond milk and some coconut oil/butter helps! Do try my version and let me know if it works out better! 🙂

  • Hey love! You know what’s also awesome is making pancakes with coconut oil! If you haven’t tried this already you must! Instead of using butter or vegetable oil when cooking pancakes, just put some coconut oil in the pan before the batter and it adds yummy flavor! <333

    • Hm, great question. To me, it’s not really that intense at all! Just a nice fresh sweeter taste. But I guess it would depend on the person’s tastebuds! I hope you do try it out 🙂
