Matcha Popsicles

Beyond being one of my favourite ingredients at the moment, matcha powder is undoubtedly becoming a global phenomenon, a discernible add-on to desserts that is dominating the evergrowing social media scene. And though there are some food trends I’ve skipped out on (and quite honestly don’t feel bad about!), matcha isn’t one of them. When I first learned to make a mint matcha frappuccino with whipped cream, it felt extremely familiar, like a lovely sort ofΒ dΓ©jΓ  vuΒ moment that somehow managed to sneak its way back to me. It felt like home.

Keeping in line with the summer theme, I bring you this matcha popsicle recipe that is a treat to be had on a sunny or rainy day.. matcha is home, after all.

Ingredients (approx. 6 medium-sized popsicles):

  • 400mL full-fat coconut milk
  • 1/2 cup vanilla yogurt
  • 1 tbsp matcha green tea powder
  • 3 tbsp honey
  • 1 tsp vanilla extract

Directions:

1: Mix together milk, yogurt, honey and vanilla extract. Add in matcha powder.

2: Pour mix into popsicle molds and freeze for approximately 5 hours or overnight. Enjoy!
