Butternut Squash & Spinach Pizza

In a time where butternut squash season is in full bloom, there is nothing more delightful than warm and welcoming pizza toppings to complement the mood. Warm vegetables are always a way to warm the soul. Crafting colourful and mouthwatering meals make me oh so happy. 🙂





1 pound of pre-made pizza dough
2 pounds butternut squash, diced into thin quater of a circle slices
3 cups baby spinach
3 tbsp olive oil
2 cloves garlic, diced
1 tsp paprika
2 cups shredded garlic mozzarella
1/4 cup ricotta cheese
1 pinch salt

1: Preheat oven to 400°F.

2: Lay squash out in a single layer on a lined baking sheet. Lightly sprinkle squash with salt. Roast for about 8 – 10 minutes.

3: Meanwhile, in a pan on low heat, add olive oil, paprika and garlic. Stir for approximately a minute.

4: Roll dough out into 14-inch pizza pan. Roll in the edges of the dough to form a crust.

5: Drizzle olive oil and paprika mix over dough. Sprinkle on garlic mozzarella, roasted squash and ricotta cheese.

6: Pop into the oven for approximately 20 minutes. At 2 minutes of cooking time left, top pizza off with spinach and more ricotta cheese and pop back into the oven. Once cooking is done, take out of the oven immediately. Enjoy!
