A quick little 10-minute recipe to keep your tastebuds happy.
Ingredients (2 servings):
- 1/2 large eggplant
- 1/2 cup flour
- 1/2 cup Italian flavoured bread crumbs (Pastene is my go-to)
- 2 eggs, scrambled
- Vegetable oil
Cut eggplant along its width into circular slices that are about 1/2 inches in width. Flour them on each side. Dip in egg so they are fully covered. Then, dip into bread crumbs. Fry over a generously oiled skillet on medium heat on each side until golden brown. They serve amazingly with an Italian main such as pasta or lasagna.
