Ingredients (2 servings):

  • 1/2 large eggplant
  • 1/2 cup flour
  • 1/2 cup Italian flavoured bread crumbs (Pastene is my go-to)
  • 2 eggs, scrambled
  • Vegetable oil

Directions:

Cut eggplant along its width into circular slices that are about 1/2 inches in width. Flour them on each side. Dip in egg so they are fully covered. Then, dip into bread crumbs. Fry over a generously oiled skillet on medium heat on each side until golden brown. They serve amazingly with an Italian main such as pasta or lasagna.

Enjoy immediately! 🙂

  • I’m with you on the frying-eggplant-front! Eggplant is a tough one to get right without frying.
