A little pick-me-up in the case that your Saturday is as grey as Montreal’s today 🙂
Ingredients (approx. 8 medium-sized popsicles):
- 1 cup blueberries
- 1 cup vanilla yogurt
- 1/2 cup coconut milk
- 3 tsp honey
- 1/2 cup water
1: Pour blueberries, water and honey into a small pot and heat at medium heat for approximately 5 minutes. Stir continuously. When done, take off heat.
2: In a small bowl, stir together yogurt and coconut milk.
3: Pour 2 tablespoons of yogurt mixture into a popsicle mold, then 2 tablespoons of blueberry mixture. Continue alternating between the two and then pop in your popsicle stick. Freeze for 5 hours or overnight. Avoid pouring mold into warm water to pull popsicle out as I have found that they get really runny that way. Pulling them out without warm water has always worked for me! Enjoy!
